Marilyn Monroe’s Stuffing

Maybe more famous now then during her lifetime, Hollywood starlet, Marilyn Monroe seems as at home in the kitchen as she did on the silver screen. Auctioned off during a 1999 sale of her personal effects at Christie’s, heralded two well used cookbooks and a set of bright yellow enameled Le Creuset pots and pans. She had a love affair that fans never knew of, she was a kitchen goddess, long before it became a “thing” to be.

I know that today, for many, is a day of preparation and if I was at home celebrating Thanksgiving with my family, we would already be in the kitchen working away on family favourite’s and much loved recipes.  In case you are looking for something new this year or haven’t quite finalized that Thanksgiving menu, I thought I would share this little recipe.

Marilyn Monroe Stuffing Recipe

This recipe, like a recipe from your grandmother or mother, is scrawled on letterhead from an insurance company, probably the nearest thing she had to hand. Recipes written on the back of receipts or in the margins of a book always seem to me, the best kinda recipes! And like many old recipes I have, there is not a clear step-by-step directive, but you can still follow along or hazard a guess at her meaning. However, the NY Times Cooking section has researched and refined her scribbling in to an exact recipe and I shall include that below, in case you don’t have the time or inclination to decipher this yourself.

Marilyn Monroe’s Stuffing, Matt Lee and Ted Lee

INGREDIENTS

  • A 10-ounce loaf sourdough bread
  • ½ pound chicken or turkey livers or hearts
  • ½ pound ground round or other beef
  • 1 tablespoon cooking oil
  • 4 stalks celery, chopped
  • 1 large onion, chopped
  • 2 cups chopped curly parsley
  • 2 eggs, hard boiled, chopped
  • 1 ½ cups raisins
  • 1 cup grated Parmesan
  • 1 ¼ cups chopped walnuts, pine nuts or roasted chestnuts, or a combination
  • 2 teaspoons dried crushedrosemary
  • 2 teaspoons dried crushed oregano
  • 2 teaspoons dried crushed thyme
  • 3 bay leaves
  • 1 tablespoon salt-free, garlic-freepoultry seasoning (or 1 teaspoon dried sage, 1 teaspoon marjoram, 1/2 teaspoon ground ginger and 1/2 teaspoon ground nutmeg)
  • 1 tablespoon kosher salt, plus more to taste
  • 1 tablespoon pepper

PREPARATION

  1. Split the bread loaf in half and soak it in a large bowl of cold water for 15 minutes. Wring out excess water over a colander and shred into pieces.
  2. Boil the livers or hearts for 8 minutes in salted water, then chop until no piece is larger than a coffee bean.
  3. In a skillet over medium-high heat, brown the ground beef in the oil, stirring occasionally and breaking up the meat, so no piece is larger than a pistachio.
  4. In your largest mixing bowl, combine the sourdough, livers, ground beef, celery, onion, parsley, eggs, raisins, Parmesan and nuts, tossing gently with your hands to combine. Whisk the rosemary, oregano, thyme, bay leaves, poultry seasoning, salt and pepper together in a bowl, scatter over the stuffing and toss again with your hands. Taste and adjust for salt. Refrigerate, covered, until ready to use as a stuffing or to bake separately as dressing. To serve as a dressing, pile about two quarts of the mixture into a 9-inch square baking dish and bake at 350 degrees until the top is evenly browned, about 1 hour.

Copenhagen: Food

Jennifer Michie Food 1

When in Copenhagen, we normally try to strike a balance between cooking in our apartment overlooking the river and dining out. This trip we tried a few new places and have added on more for our next visit.

First stop was to Conditori La Glace for a pitcher of hot chocolate with a heaping bowl of whipped cream alongside. I got a slice of the Karen Blixen Cake, a delicious blend of coffee and chocolate.

We tried a new burger joint. Burgers are the “in” thing in Copenhagen right now. Vesterbro’s Original Burger Restaurant was our pick. We visited the Istedgade location. However, I’m ashamed to say that we were so hungry and I dove right into my Greek burger and devoured it before even thinking I should snap a picture of it’s gorgeous loveliness. A word to the wise, if you visit this place, the portions are very generous and one order of french fries is easily shared between two if not three people.

Our favourite foodie discovery this trip was Neighbourhood Pizza. Where do I begin? It’s a cozy setting. you sit alongside strangers, but it still felt intimate. I had the Pumpkin Sour Cocktail, as their tagline stated: pumpkin is the new black! It was truly refreshing, not cloyingly sweet or bitter at all, it walked the perfect line. Next up, the PIZZA! Their pizza base is ultra thin and crispy. It was almost cracker like at the edges. They serve a salad on top of the pizza and a section of infused oils sit on the table to dress your salad and pizza as you so desire. I had the Fig Ham (Cured parma ham, fresh figs, red onions, goat cheese, capers, olive compote & fresh parsley) and Mr. Michie ate the Tomato Chicken (Spiced fried chicken, picked baby tomatoes, red onions, buffalo mozzarella, tomato pesto & fresh coriander). Each bite was a new taste sensation. It was culinary happiness. We split a piece of chocolate cake for dessert. Pure JOY!

Of course no trip to Copenhagen would be complete if we didn’t have coffee and chocolate cinnamon buns from Emmery’s for breakfast. Happiness is…

Copenhagen: Tivoli

Jennifer Michie Tivoli 1

Our latest Copenhagen adventure was filled with long walks, delicious food, art and of course a trip to Tivoli. Everywhere we went, candles were lit and pumpkins glowed; it was so cozy. The weather was frosty, the air was brisk – it truly felt like fall.

Once again, we were awed by the magic of the park. It was entirely decked out for Halloween. Hay bales and pumpkins were everywhere! Rides had even been transformed for the festive season and each of the many restaurants were in on the act with their own ghostly decorations.

Little Halloween huts were dotted around, selling Halloween goodies; delicious food, hot chocolate and freshly fried doughnuts. I treated Mr. Michie to a hot dog (his favourite) and he bought me an adorable black satin witch’s hat to wear for Halloween.

Normally, we just stroll through the grounds and don’t go on the rides, but this time we bought tickets at a kiosk and went on the ‘Flying Trunk‘ ride, which is based around a collection of Hans Christian Andersen’s stories. It was adorable! This was my one blurry snap of The Little Mermaid:

As the sun went down and day turned to night, the lights slowly came on and scarecrow pumpkins glowed everywhere. Tivoli is such a magical place!

Mr. Michie and I headed back to our apartment filled with the spirit of Halloween.

Take Off

Jennifer Michie Wheels Up

This was my view last night as we flew back from our beloved Copenhagen to London. I’ve been quiet in this space the past few days, because I have been having too much fun. I’ll blog about it soon, there is so much I want to share!

Munchkins

Jennifer Michie Munchkin

Well, I spoke too soon yesterday! Just as I was walking into the grocery store, they were setting up a giant Halloween display that included rows and rows of munchkins. So, of course one of those munchkins jumped off the shelf and into my cart. He knew he needed to come home to the cottage with me.

Happy Friday!

Pumpkins

It’s officially October, I saw my first pile of pumpkins today and it made me so very happy! That ribbed orb of flaming burnt orange and tinges of golden yellow, holds within it the very essence of autumn. Happiness is…

Autumnal Equinox

Jennifer Michie Hydrangea

Today we celebrate the first day of Fall. It felt as if we were quickly being ushered in this morning. The air was crisp, the dew looked almost frosted. As I walked to work, leaves twirled down around me from their lofty branches to softly land on the street, forming little crunchy pools of decay.

Summer fought her way back this afternoon as the sun was blazing and it was decidedly warm. But, the evening is cooling off, there’s a bite to the air. I think we’re moving into sweater weather.

Picture House Cinema

As we often use cut throughs when in London, we always discover new things. Yesterday while zigzagging around Shaftesbury Avenue, we walked by the Picture House Cinema. They are dotted around London, but this was the first one I had ever been to.

We peered through their cafe, took in the grandeur of this gorgeous old building and before we knew it, our feet were carrying us inside.

We bought tickets and walked up the stunning red tiled staircase. We peeked into the bar and then got some snacks. Popcorn and a pink striped cup of pick ‘n mix as I was in the mood for some gummy candy.

We headed toward the screens and then proceeded up two floors to get to our screen. There were carved murals on the wall depicting medieval scenes, that were just beautiful!

The theatre itself was spacious, we sat in the back on a couch seat and snuggled up to watch The Irrational Man. It was a great movie going experience and we will definitely be back!

Muntjacs

Deer 1963

I stood on the train platform yesterday heading into London and I heard rustling coming from the wooded embankment opposite me. I scanned the trees and noticed two then four little legs slowly come down the hill. Then I saw more little furry stick like legs. It was a group of muntjacs foraging.

I looked around to see if anyone else had noticed. They hadn’t. They were either on their phone, on their iPad, reading, talking to someone or staring at the clock on the platform and wishing for the train to appear. No one else had taken them in.

They stepped gingerly, yet gracefully down the hill, stopping here and there to sniff or munch. They were hidden pretty well by the canopy of leaves. But I knew what I was looking for. I treasure these interactions with nature. They are a gift.

{P.S. The image above is not of a muntjac, they are much smaller animals. I just liked this image and that someone in 1963, saw a deer in their yard and ran to get their camera. // Image found HERE}
