We had a really lovely anniversary on Wednesday. We kept it simple and went where the wind took us. We had lunch at one of our favorite places in London and did a little browsing and a little strolling before heading home.

We had decided to keep dinner simple and enjoyable as well. So we did half the cooking and the fabulous Italian restaurant down the block did the other half. While I set the table and made a salad, Mr. Michie headed down the street to pick up the lasagna we had ordered.

I didn’t mind letting someone else make my dinner but there was no way, someone else was going to make our dessert, that was my real contribution to our anniversary date. I have wanted to make this cake since the first time I saw it on The Pioneer Woman’s site.

I earmarked it on my computer and would look at it from time to time, but nothing happened. Then her second cookbook came out and I saw that it was in there, but again nothing happened with it. You see, Mr. Michie is not really a fan of coconut and I was concerned he wouldn’t like it, but I think this cake has made him and coconut lifelong friends! I knew that this cake would be perfect for our anniversary, he would just have to taste it and he would know it was perfect too! So, I got my cakes ready on Tuesday before I met my girlfriend and iced them later that night before I went to bed. It was 4 layers of complete happiness!

It tasted great with champagne and great with coffee, it is also excellent for breakfast, but I won’t tell you how I know that!

It was a dinner with a mutual friend, that led to a drink and a dance, that led to a walk home through moonlit streets, that led to a talk on my front porch till dawn, that led to an official date where I was too nervous to eat, that led to hand holding, that led to a dance in the middle of the street, that led to a kiss on my front porch, that led to forever.

Here’s to another 9 years with you, you still make my heart flutter!

I have spent the morning baking an Italian Cream Cake for dessert tomorrow and I am meeting a friend for lunch today who I haven’t seen in ages! We have so much to catch up, it is going to be such a FUN afternoon! What a great way to spend a Tuesday.

Our Weekend

We have been quiet the past two days, just catching up on sleep. Today I am going to attack the house with a vengeance, so I can spend the rest of the week relaxing and doing a few projects I want to do around the house, which will be easier to accomplish with the house organised.

To start the ball rolling for breakfast we had rye bread with cream cheese and cucumber and avocado toppings. It was really delicious. Mr. Michie added some fresh chillies to his avocados, I am not that adventurous in the morning to have done that!

Yesterday we went grocery shopping, while picking up some potatoes, I spotted these:

a little taste of home, I couldn’t believe it! They are going on the menu this week, we are going to make baked sweet potatoes with something heavenly to go alongside it. After shopping we grabbed a sandwich for lunch and then took a long stroll. We headed over to the pond, but the baby ducklings must have been napping, because they weren’t out and about and their mamas were staying near the reeds keeping a close eye.

We sat on one of the benches and felt the sun on us, what a glorious treat that was, as it was supposed to rain all weekend.

We strolled across the common and through the woods to our other pond and watched the ducks swim around the lilies. After awhile we started walking again, through the woods, across the road and into the other side of the forest.

Heading down one little path, I heard some noise and stopped. I was extra quiet and for the next 15 minutes or so, I watched a little family of baby wood mice run around a rotting tree that had fallen into the woods. They were so cute and fat and furry. They ran in and out of the little holes chasing one another then running through the leaves. It was just the cutest thing.

We were greeted by robins and blue tits and wood pigeons. The sunlight dappled the path, it was just magic. I love sunny days where we walk in our woods, where life is all around if you just take a moment to stop and listen. It is pure and simple happiness.

We picked up some ice cream on the way home and had hot fudge sundaes with salted pecans, whipped cream and fresh raspberries. It was wonderful, the tastes of Summer wrapped up in a bowl!

What a Week!

Well, we made it! And what a week it has been! I am looking forward to 1/2 term break next week. A whole week just to ourselves! I have a few things on the agenda, but just resting is one of them, as both of us are fighting off colds. It isn’t easy to stay well at the moment, especially when it is almost the end of May and there is snow predicted for this evening, or at the very least slushy rain (so the weatherman says)!

My little heater is on next to me as I type, as I am trying to keep warm, but I am not sure how much of a difference it is making, it all feels very Dickensian.

There are a few new recipes I want to try next week, one being an Italian Cream Cake for our wedding anniversary. At the moment we are thinking that a romantic quiet night in, sounds like a prefect way to celebrate our anniversary, with good Italian food, wine, music and dessert!

In the mean time we just have to survive Friday. So, here’s to the weekend and long may it last!

The First Strawberries of the Season

Today was Mr. Michie’s last class with his Year 13 Media students. They traditionally have a cake day once a week and the last one was his to do.

I normally do Mr. Michie’s baking for those days and last night we made a 3 tiered vanilla cake with a whipped cream and cream cheese frosting. We slathered the frosting on each layer and then packed it full of strawberries, before putting more frosting on top to keep the next cake held in place.

All of the kids loved it! There was one layer left over from my baking as my little European fridge could not have handled a 4 tiered cake, we almost didn’t get the 3 tiered one in! So with the leftover layer, I spread the remaining frosting on it and piled it high with our first real strawberries of the season and fresh blueberries.

It was the perfect dessert!


I think there must be an invisible “Kick Me” sign on me this week or something, because this has been one heck of a week so far!

Thank goodness tomorrow is Thursday and we are that much closer to the weekend!

Its times like these where you just can’t beat a good old fashioned 80s movie, filled with teen angst, feel good music and a great dance scene, cue Footloose:

You might just be able to cure anything with dancing and an 80s anthem!

The Ducklings

We went for a long walk yesterday morning. Our first real walk of the Spring season and we meandered down to one of the ponds.

We sat on a bench and watched the heron, picking his way through the water. The male ducks came to greet us “Good Morning” in a gentlemanly fashion, quacking away at us, hoping we had some bread.

The mama ducks slowly paddled out from behind the reeds, with little brown and yellow fuzzy ducklings in tow. They were adorable to watch, some trying to keep up, others full of adventure were heading in the opposite direction of their mama, until she quacked for them to come back.

One little adventuresome spirit decided to stroll up and see us. He was just too cute! I wanted so badly to brush his tender little feathers. It was pure and simple happiness on a Sunday morning.

It’s FRIDAY! We made it!! This is a weekend for libations, cooking, hanging out and just being. Because I have had enough of this week and I am ready to move on!

So, here’s to the weekend, long may it last! And here’s to Friday night Date Night, may it come around quickly today, because I have delicious eating and fun movie watching plans!
